Honestly, as a daily driver, it's surprisingly usable. I've been driving it daily for about a year now, and once you set everything up, you can just do updates once a week overnight. Gentoo is super stable and has a surprisingly large, non-toxic community to go with it. Heck, even without binpackages, it's not too painful to drive daily (though they're useful for installing applications).

Copying the EFI partition with dd does not necessarily recreate a valid UEFI boot entry for the new drive, and copying the root filesystem does not install/update GRUB's EFI files on the new disk.
