IMO most offer letters include a paragraph talking about how a company or the employee can terminate employment at any time, without any obligations - so I do not consider it unethical. The employee agreed to what was signed in good faith and is not acting dishonestly in continuing to interview - they are merely operating under the terms of the contract.

Employment is at-will in my state and a signed letter does not constitute a contract of employment. They often state that explicitly. It is therefore ethical and actually good business to keep interviewing.

There isn’t a company out there that isn’t, or hasn’t, adopted some sort DEI/Job outsourcing policies specifically designed to fuck you over as a white man (I assume you’re white because you’re considering the morality of your actions - an Indian would never).
