#1 Special Dinner Planned: Macau Pork Sandwiches! /
absolutefutility · 2026-09-01 12:33

I caught an episode of Food Wishes with Chef John where he cooked a pork sandwich out of Anthony Bourdain's cookbook.

The pork cutlet is marinated in a mixture of garlic, brown sugar, soy sauce, rice wine vinegar, and rice wine. It is supposed to have some Chinese five-spice powder in it, but I'm not a huge fan of that flavor so I thought I'd just sprinkle it on at the end when the cutlet is breaded in flour and panko and then deep fried.

It is served on some Texas toast. It is very reminiscent of a pork katsu sandwich that you would find in Japan.

In fact, the only real difference is the Katsu sauce. This Macau sandwich doesn't have it, but Chef John served it with "sambal butter", which is just a compound butter made from spicy chili paste mixed with butter.

But I don't do "spicy chili" anything, so I wasn't going to make that.

The Katsu sauce, however, might be something I can manage. Katsu sauce, in simplest terms, is like a Japanese BBQ sauce. It is incredibly simple: soy sauce, ketchup, brown sugar, Worcestershire, and cayenne.

The real problem I have is figuring out what to serve with it? I don't see the point in serving food that you have to eat with your hands WITH food that you have to eat with utensils. You should have a food that is either everything you can eat with your hands or everything you can eat with utensils.

The problem is...I don't have anything in stock that would fit the "eat with hands" category. Fries? Onion rings? All out! I have chips...I think that might be as far as I'm willing to go with this dish!

↳ #2 What a horrible mess... /
JennSwazimoto · 2026-09-01 12:42

(1) The opening is abrupt. "I caught an episode of Food Wishes with Chef John where he cooked a pork sandwich out of Anthony Bourdain's cookbook" is a long, dense sentence that buries the lede. A simpler opening would work better.

(2) The phrase "I'm not a huge fan of that flavor" is vague. Why doesn't the writer like five-spice? Is it the star anise? The cinnamon? The writer doesn't explain.

(3) The writer says "I thought I'd just sprinkle it on at the end" but then says "when the cutlet is breaded in flour and panko and then deep fried." This is confusing—is the five-spice sprinkled on before or after frying? The writer doesn't clarify.

(4) The comparison to Japanese pork katsu is helpful, but the writer says "the only real difference is the Katsu sauce" and then immediately contradicts this by mentioning the sambal butter. The writer needs to explain the differences more clearly.

(5) The writer says "I don't do 'spicy chili' anything" but then proposes making Katsu sauce, which contains cayenne. This is a contradiction.

(6) The writer says "I wasn't going to make that" (the sambal butter) but doesn't explain why. Is it the spice? The butter? The writer never says.

(7) The Katsu sauce recipe is described as "incredibly simple" but the writer doesn't provide measurements or ratios. A reader who wants to replicate it would be frustrated.

(8) The real problem—what to serve with the sandwich—is introduced late in the post. The writer spends most of the post on the sandwich itself and only addresses the side dish in the final paragraph.

(9) The writer's rule about not mixing hand food with utensil food is presented as a universal truth. This is a personal preference, not a rule of cooking.

(10) The writer says "I don't have anything in stock that would fit the 'eat with hands' category" but then mentions chips. Chips are finger food. The writer contradicts themselves.

(11) The chips suggestion is presented as a compromise ("I think that might be as far as I'm willing to go"), but the writer doesn't explain why they're hesitant. Are chips not fancy enough? Too messy? The reader is left guessing.

(12) The writer never addresses the presentation of the dish. Would the chips be served alongside the sandwich or as a side? This matters for the meal's flow.

(13) The post lacks a conclusion. The writer ends with the chips idea, but never says whether they're satisfied with this solution.

(14) The writer's tone is slightly rigid. The rule about hand food vs. utensil food is presented as absolute, which may alienate readers with different preferences.

(15) The writer doesn't acknowledge that chips are a common accompaniment to sandwiches. This would be a simple justification.

(16) The post doesn't mention the most obvious alternative: a simple salad. It's a common side for sandwiches and would be easy to prepare.

(17) The writer never explains why they don't have fries or onion rings in stock. This would add useful context.

(18) The writer's reference to "Texas toast" is unexplained. Non-US readers may not know what this is.

(19) The writer never mentions the cooking time or temperature for the pork cutlets. A reader who wants to replicate the dish would need this information.

(20) The post is slightly self-indulgent. The writer spends a lot of time explaining their personal preferences (no five-spice, no spicy chili, no hand/utensil mixing) without considering whether the reader shares these concerns.

Lol.

You really need to stop trying to use AI when your 5th grade dropout education doesn't actually let you understand any of the WRONG things its telling you.

But I only had pickles on hand and that was definitely the wrong way to go since I had coleslaw as a condiment.

Ultimately, we didn't eat anything with the sandwich, it was enough on its own.

I actually made too much. I started with one small pack of boneless ribs which had six ribs in it.

However...

When I pounded them down and added the slits, each rib grew to be about seven inches long! One cutlet ended up being enough for two sandwiches, so now I have five enormous cutlets left!

If I'd known they were going to make so much I'd have waited until I had more people over for dinner.

I didn't go to school for it, but, after I left my job back in 2008 - when the dotcom bubble burst - I had an awful lot of money and no real desire to do anything productive. So I decided to turn my attention to cooking all the fancy and schmancy dishes that I saw in my favorite cooking shows.

I cooked my way through the Two Fat Ladies, Julia Child, Nigella, Jamie Oliver, Mary Berry, and Fanny Cradock. I learned a lot and cultivated a passion for cooking new things.

我照着《两个胖女人》(Two Fat Ladies)、Julia Child、Nigella、Jamie Oliver、Mary Berry 和 Fanny Cradock 的节目一路做下来。

Before that, I grew up just like everyone else did...you know the thing...the menu was set. Every Monday was one thing, Tuesday...Wednesday...you could set your watch by what was going to show up on the dinner table.

I was ready for something new.

I had dated a couple of picky eaters right in a row and was just done with people who would only eat ONE thing every time they went out to a restaurant. So, I started travelling and getting new experiences.

And then I started writing about those experiences until I was one of the top rated reviewers on...whatever review site was popular at the time. TripAdvisor, I think it was.

应该是 TripAdvisor(猫途鹰)。

And you know that which is why you're always whining about all these lies that you can't show...but are somehow "the only thing I post"...so...

Your problem is that you don't like something that I post and you jump up and down screaming like an infant and pulling your pigtails claiming it is a "lie" rather than just accepting that you're an idiot.
