What is the best ham for a ham sandwich?

I am particularly fond of the maple glazed ham. Whether its honey ham, ham off the bone, black forest, cherry wood smoked, you name it, they have a version of ham for every occasion.

Generally, I like the ham off the bone version because it has a really great flavor and texture, but I find that the chipped or chopped or whatever it is called colloquially where you are version of the honey or maple ham is the one I enjoy the best for sandwiches. It has a great texture and seems to be more flavorful.
